I en alder af kun 14 år begyndte han at samle på fine vine, og pengene tjente han ved efter skoletid at arbejde som køkkenassistent på Hotel Balka Søbad.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eEfter tre års studier til ingeniør og et arbejde som receptionschef i et sportscenter på Østerbro besluttede Henrik Poulsen sig for at gøre sin store hobby, vin, til sin levevej. Han fik job i Knud Jørgensen \u0026amp; Helmbæk Vinhandel i Hellerup og tog en uddannelse inden for handel, markedsføring og ledelse på Niels Brock.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eHan drømte om at tage en Master of Wine, men først ville han forberede sig grundigt ved at rejse rundt i vinens verden - til Sydeuropa, Californien, Chile, Argentina, Australien og Sydafrika. Og han ville bruge et år på hvert kontinent.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eTuren startede i 1999 i Bordeaux hos det danskejede Château de Haux, hvor han assisterede med slottets vinsalg på fransk jord. Næste stop blev Newton Vineyards i Napa, hvor han for alvor fik jord under neglene, fik et godt kendskab til den amerikanske vinbranche og blev forfremmet til laboratoriedirektør med ansvar for de kemiske analyser af vinen.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eDen store dannelsesrejse rundt til kontinenterne blev droppet, og Henrik Poulsen er stadig at finde i Napa - dog ikke hos Newton Vineyards, som han forlod i 2006.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eUddannelsen til Master of Wine er endnu ikke lagt på hylden, og indtil videre har han bestået de første tre niveauer af grunduddannelsen, WSET.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eEfter et job som assisterende vinmager hos Alpha Omega Winery i Rutherford - hvor han arbejde tæt sammen med den berømte vinkonsulent Michel Rolland - grundlagde Henrik Poulsen i 2010 sit eget vinhus, Release Winery. Her satser han på en lille mængde rødvin af høj kvalitet på Cabernet Sauvignon. However 2014 is just that! \u003cbr\u003e\u003c\/span\u003e\u003cspan class=\"aquire\"\u003eOne of the driest on record the winter season leading into 2014 provided Napa Valley with rainfall totals approximately half of normal. \u003cbr\u003eWith California entering its 4th year of continuous drought this could have proven to become a challenging growing season had it not been for heavy rains that threw about 15” in late February\/early March.\u003cbr\u003e\u003c\/span\u003eWith vines emerging from dormancy and just about to start another early growth cycle the timing simply could not have been more ideal.\u003cbr\u003eAided by a warm spring without any precipitation, conditions were perfect for bloom resulting in a great fruit-set and yields that generally were at or even above the abundant 2013-vintage.\u003cbr\u003eA mild summer kept irrigation needs to a minimum resulting in slightly smaller berries with greater concentration and thus more intense flavors.\u003cbr\u003eIntense was certainly also the word that came to mind on 8\/24 when a devastating 6.0 earthquake jolted through Napa and created havoc and lots of damage in the region.\u003cbr\u003eAlthough devastating for many structures (and wine-barrels\/bottles stacked high in warehouses!) vineyards were largely unaffected and starting about a month later most winemakers could begin picking perfectly ripe fruit at leisure fitting their individual styles and preference.\u003cbr\u003eFor Release Winery picking dates are always determined solely on taste with the goal of letting each vintage show its unique style, structure and personality. True to this philosophy the grapes for our 2014-vintage were therefore well into fermentation before the first (light) shower arrived mid-October.\u003cbr\u003eHaving crafted yet another wine that finds its inspiration in the “old-school” Napa hillside Cabs from 1960-80’s we are thoroughly proud to here share our 5th vintage (“V”) with you.\u003cbr\u003e\u003cspan\u003eBottled July 2016 after 21+ months of aging in French oak barrels this 100% Cabernet Sauvignon from two hillside vineyards 1700’ up Atlas Peak is bound for a long evolution in bottle and will certainly reward those with both patience and cold cellars. First was an extended 12-day heatwave with day temperatures above 100 degrees Fahrenheit. Precipitation of 0.6\" in April had no impact on vines, and another 0.3\" in early May did also not negatively affect bloom.\u003c\/div\u003e\n\u003cdiv class=\"elementToProof\"\u003eTemperatures through August continued to stay cooler than usual providing vines, in particular Cabernet Sauvignon, with a chance to develop slightly thicker skins than normal. This and the absence of any heat events during berry formation, coupled with larger cluster sizes resulted in yields above average.\u003c\/div\u003e\n\u003cdiv class=\"elementToProof\"\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv class=\"elementToProof\"\u003e\n\u003cspan\u003eThe somewhat lower Brix accumulation throughout the growing season, allowing for ideal physiological ripeness, complex flavor development, deep coloration and favorable balances between sugar and natural acidity, has resulted in one of Napa Valley's best vintages ever.\u003c\/span\u003e\u003cbr\u003e\n\u003c\/div\u003e\n\u003cdiv class=\"elementToProof\"\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv class=\"elementToProof\"\u003eBeing able to basically pick fruit at leisure, the 2.83 tons of grapes for the 2018-vintage of Release Winery Cabernet Sauvignon \"IX\" were harvested in perfect conditions on September 27\u003cspan\u003e\u003csup\u003eth\u003c\/sup\u003e, ahead of the first Fall rain events on October 2nd\/3rd. \u003c\/span\u003e\n\u003c\/div\u003e\n\u003cdiv class=\"elementToProof\"\u003e\u003cspan\u003eAs usual the grapes were fermented in open-top french oak barrels and winemaking operations were respectfully adjusted to the fruity and juicy style of the vintage. The must stayed in contact with skins for a total maceration time of 45 days before being pressed-off. With moderate to cooler temperatures in Spring and fairly high levels of moisture in the ground, vines generally were off to a delayed start. Showers during bloom in May also provided conditions that on the face looked like it could be a challenging season.\u003cspan data-mce-fragment=\"1\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eHowever, even and moderate temperatures from June into August allowed vines to balance their growth and by late-August, as berry and cluster size were fully developed, it was clear that 2019 would be a memorable vintage.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eIn my 20+ years in Napa I have personally never witnessed any other vintage where flavor development appeared as early as they did in 2019. Not necessarily correlating to usual Brix or pH values, by late August\/early September, most red grapes showed complexities and flavors usually appearing much later in season.\u003cspan data-mce-fragment=\"1\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eHarvest at Release Winery is always guided by taste, overall phenolic ripeness and skin maturity, rather than dictated by Lab numbers. With an early season on hand the ability to allow grapes longer hangtime on the vines, in order to gain additional flavors, aromatics and further complexity was an opportunity not to be missed. \u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eHarvest therefore took place only late in September on the 26th, on which a total of 3.27 tons of the unique Cabernet Sauvignon clone \"Weimer\", were picked off the few rowes at our treasured hillside vineyard atop Atlas Peak AVA.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eAs usual the must undervent an initial cold-soak and alcoholic fermentation in open-top barrels with daily punch-downs. Unlike most other vintages, overall balance and structure was achieved after only 17 days of fermentation at which point the free-run wine were drained and the skins pressed off. \u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eThe somewhat short maceration is no doubt part of the reason why the wine seemed to constantly improve during barrel-aging. For this reason, and to allow \"the wine to guide the winemaker\" rather than the other way around, for the first time ever it spent a total of 34 months maturing in seasoned French oak barrels.
